I don't normally like an African coffee roasted dark, but I was up for something a little different. So with that being said, I did some playing around with the Ethiopian Yirgacheffe that is usually along the city roast side. Taken to just on the verge of second crack, the flavor notes shift in profile. From cupping this one, you still get the acidity, but it is muted from the dark degree of roast. A bold yet still bright flavor that is unique to say the least. Only did enough for 3 bags in the store for this go around.
As most of you know I love to experiment with different coffees for espresso. So I added some of the new Natural Ethiopian Sidamo to the blend. Only a small % but man it packs a punch. Right off you will notice the berry aroma, its intoxicating. The espresso shot is still quite smooth, but will finish with a sweet aftertaste. Overall I think everyone will like it.
